Weekend

I haven't done any posts this weekend, mostly because most of it has been spent working on a Time Series Modelling Assignment that counts for 20% of my econometrics grade. It's actually quite fun (never thought I'd say that) but it does take up a lot of time!

Anyway here are some pictures from my weekend


Went to a house party on Friday. It was so cool, they had decorated the whole house, set up tables an couches as over, covered all the walls with tin-foil and black rubbish bags and put up multicolored lights and blinking fairy lights so that the whole house looked like a club. 

(Wore a semi see-through blue jumper from Banana Republic, leather trousers and a black blazer).


I made raw-chocolate coconut balls. So good!! Definitely my favorite kind of candy! 
Recipe: 

100gr oatmeal
100gr muesli (I skip this though to make it more chocolaty)
50gr dates
1 dl coconut oil
1 dl agave syrup
1 dl 100% pure organic cocoa (I use Green&Black's)
80gr desiccated coconut (to roll them in)

Either put it all in a food-processor or just mix it all together in a bowl and chop it up finely. I chopped it since I don't have a food-processor and it doesn't take long at all! Also because you don't bake them in the oven it takes a lot less time than making a cake. 

Then just roll them into balls, cover them with the desiccated coconut and put in the freezer for a bit before you try them. It's best to also just keep them in the freezer and just take them out when you want some. Best chocolate treat in the world in my opinion and you don't have to feel guilty! 



Also made carrot-celery-ginger and mint juice in my juicer today. So good! And you can just feel how healthy it is when you drink it. Had it as a snack with some rice cakes with organic crunchy peanut butter. Love peanut butter!
